Electric Dough Pizza Co.

Electric Dough Pizza Co. brought a new style of pie to Jacksonville when it opened in June 2025 inside the historic San Marco Theatre building, in the heart of San Marco Square. The restaurant is the work of Chef Tom Gray, a two-time James Beard Award nominee who also owns Prati Italia at the Town Center and Town Hall, a few doors down in San Marco.

The signature here is the square pizza: a long-fermented dough baked so the cheese runs all the way to the edge and caramelizes into a crispy, crunchy border. Each pie is loaded corner to corner with toppings, a deliberate contrast to the thin, foldable New York slice you find elsewhere in town. Two sizes, a 6-piece and a 10-piece, so it scales from lunch for one to dinner for three.

Beyond the pizza, the menu runs to Lightning Bites appetizers, fresh salads, and twelve rotating flavors of Villa Dolce gelato and sorbetto, plus gelato sandwiches and Lavazza coffee. There are no fryers in the kitchen. Gluten-free crusts come from Elaine's Gluten Free Creations on 12-inch ovals, and the menu marks vegetarian and vegan items, so the table does not have to split up over dietary needs.

There is a full craft bar: cocktails classic and on tap, beer on tap and in the bottle, wine by the glass, hard slushees, and the full range of Tractor Organic Craft Beverage Co. sodas, teas and juices for anyone not drinking.

Happy hour runs every day from 3:14 to 6 p.m. The odd start time is the point: pi is 3.14, and this is a pizza company. On Friday and Saturday it runs again from 10 p.m. to midnight, and the kitchen stays open with it, which makes this one of the few places in San Marco serving a full menu that late. There is also a $12.50 lunch special every day from 11 a.m. to 3 p.m., dine-in.

Service is what the restaurant calls craft casual: order at the counter, take a table number, seat yourself, and the team brings it out and can ring you up at the table. Guests at the bar get full service. No reservations.

The setting is part of the draw. The building opened on June 5, 1938 as a Sparks Theatre, designed by Roy A. Benjamin, the architect behind the Florida Theatre downtown. It showed movies for eighty-four years before closing in 2022. Electric Dough started serving on June 11, 2025, almost exactly eighty-seven years to the day after the first screening.

Catering is available and portioned for groups. Open 11 a.m. to 10 p.m. Sunday through Thursday, and 11 a.m. to midnight Friday and Saturday.
