What Makes a Good Slice

A slice is a different test than a pie. It has usually been sitting for a bit and gets reheated to order, so the crust has to hold up. The best slice shops bake often, keep the slices moving, and give them a quick turn in the oven so the bottom crisps back up and the cheese re-melts. A great fresh slice is foldable, structurally sound, and not greasy enough to soak through the paper plate.

Neighborhoods With Slice Culture

Riverside and Five Points. The densest, most walkable part of the city and the easiest place to grab a slice on foot. Old-school spots here even run two-dollar slice specials.
The Beaches. Jacksonville Beach in particular has the foot traffic that supports New York-style slice shops a few blocks from the ocean. Ideal post-beach food.
San Marco. Walkable square, sit-down vibe, good for a slice plus a wander.

What to Order

When you are trying a new slice shop, order a plain cheese first. It is the truest test of their dough, sauce, and bake. If the plain slice is good, everything else will be too. Pepperoni is the second test: you want the edges cupped and a little crispy.

Slice or Pie?

If it is just you or two people and you want it now, the slice wins on speed and price. If you are feeding a group or you want a specific style done right out of the oven, order the whole pie. Most slice shops will also sell you a fresh pie if you call ahead.
